Role Overview

The Head Mixologist is responsible for leading the cocktail and beverage programme within the venue, ensuring consistency, quality, creativity, and commercial performance in line with FAB Group standards. This role combines advanced technical mixology skills with leadership, training, and operational discipline.

As the senior authority for cocktails and bar execution, the Head Mixologist supports menu development, service standards, team capability, and innovation while remaining actively involved in service.

Key Responsibilities

Beverage Quality & Menu Execution

• Own the execution and consistency of the cocktail and beverage menu

• Ensure all drinks are prepared to approved recipes, specifications, and presentation standards

• Support development and rollout of seasonal cocktails and beverage activations

Bar Leadership & Training

• Lead and mentor bartenders and barbacks during service

• Set technical standards for mixology, speed, and presentation

• Deliver on-the-job training and skills development for the bar team

Service Delivery & Guest Experience

• Actively lead bar service during peak trading periods

• Engage with guests, provide recommendations, and deliver a premium bar experience

• Support service recovery and guest feedback management at the bar

Operational Controls & Discipline

• Ensure cleanliness, organisation, and hygiene across bar stations and storage

• Support stock control, portioning discipline, and waste reduction

• Ensure compliance with licensing, health, and safety standards

KPIs & Success Metrics

• Cocktail quality and consistency

• Speed and efficiency of bar service

• Guest satisfaction at the bar

• Team capability and training progress

• Waste reduction and portion control

Candidate Requirements

• 4–6 years’ experience in cocktail-led bar environments

• Strong technical knowledge of classic and modern mixology

• Proven leadership and training capability

• Calm, confident presence during high-volume service

• Strong communication and guest engagement skills
