Pastry Chef - F&B (Multi Site)

Role Purpose
We are building a multi-brand F&B platform and are entering an intensive pre-opening and launch phase across multiple lifestyle, café, and restaurant concepts scheduled to open in the coming months.
We are recruiting a full-time, permanent Pastry Chef to support pastry development and mobilisation across multiple brands during this build and launch phase. Following the successful opening and stabilisation of sites, this role will transition into an operational multi-site position working across brand kitchens and the Central Production Unit (CPU).
This is not a single-site pastry position. It is a multi-brand role requiring both structured development capability and operational discipline. The ideal candidate will be seeking a long-term operational role within a growing hospitality platform.
Core Scope of the Role
Supports pastry and dessert product and menu development across multiple brands
Support brand build-up and culinary identity creation
Contribute to BOH design and pastry section planning during fit-out
Deliver commercially viable product ranges
Support pre-opening, training, and operational integration
Key Responsibilities
1. Multi-Brand Pastry Development
Develop pastry and dessert menus tailored to individual brand positioning
Create structured recipe packs, costing sheets, and SOP documentation
Ensure cross-brand consistency while respecting brand DNA
Standardise core recipes for scalability across sites
Identify opportunities for signature items and hero products
2. Brand Build-Up & Project Development Support
Participate in early-stage brand concept discussions
Support kitchen layout planning from a pastry workflow perspective
Review BOH drawings to ensure pastry section practicality
Advise on pastry equipment specification and procurement
Participate in site visits during fit-out to align operational functionality
Develop pastry production plans aligned with site capacity
3. Pre-Opening & Mobilisation
Lead pastry menu execution during pre-opening phase
Recruit and train pastry teams for new sites
Deliver structured training programmes and product demonstrations
Ensure recipe books, prep guides, and service SOPs are complete before launch
Provide hands-on support during soft openings
Oversee early trading performance and adjust recipes where required
4. Commercial & Cost Oversight
Ensure all pastry items are costed accurately and meet GP targets
Manage ingredient sourcing and supplier alignment
Monitor wastage controls and portion discipline
Align product design with labour productivity models
Identify opportunities for margin enhancement
5. Quality & Governance
Ensure pastry production aligns with group SOP standards
Maintain food safety and hygiene compliance across sites
Support audit preparation and kitchen compliance standards
Maintain structured development trackers and documentation
Ensure version control of recipes and product updates
6. Cross-Functional Collaboration
Work closely with Operations, Brand, Procurement, and PMO teams
Support menu integration into POS systems and training manuals
Contribute to marketing launches and product photography where required
Support seasonal menu rollouts across brands
Working Environment & Expectations
This role operates within a startup growth environment.
The Development Pastry Chef must:
Be comfortable working across multiple brands simultaneously
Be available for flexible working hours during pre-opening phases
Support evening and weekend trading launches where required
Balance creativity with commercial discipline
Operate with ownership and accountability
This is not a single-location, fixed-hours pastry role. It requires hands-on involvement in build-up, launch, and operational stabilisation phases across the portfolio.
Required Experience & Profile
7–10+ years pastry experience within premium hospitality environments
Experience in multi-site or brand-led pastry development
Strong background in structured recipe documentation and costing
Experience in pre-opening environments
Commercially literate with strong GP awareness
Experience working alongside design and project teams during build-out
Strong training and leadership capability
UAE / GCC experience preferred
